GRIS DE TOUL
Characteristics
Directly pressed from whole grapes, this blend is composed of 80% Gamay and 20% Pinot Noir. This grey wine has a beautiful pale pink colour, and its delicate bouquet reveals aromas of red berries (wild strawberries, gooseberries) and blackcurrant buds. The attack is bold, delicious and fresh, with a well-balanced finish and a very pleasant touch of minerality (flint).
Food pairings
This grey wine, typical of the terroir, is perfect with summer barbecues and local charcuterie (fuseau lorrain). It is an ideal accompaniment to pâté lorrain. Serve chilled: 6-8°C.

PINOT NOIR
Characteristics
Pinot Noir is a grand black grape variety, king of Burgundy, which is also found in Champagne and Alsace. Produced by macerating very ripe, perfectly healthy grapes, destemmed prior to vatting. Lively and intense, the colour is a beautiful deep ruby red. The aromas evoke black fruits (wild cherry, blackberry, blackcurrant, elderberry), enhanced by spicy, peppery and liquorice notes. These sensations are clearly present on the palate, marked by tannins that are still a little lively but just need to soften to become even silkier with a little ageing.
Food pairings
This Pinot Noir pairs well with many dishes, including poultry (roast chicken), pan-fried or grilled red meat (rib steak, prime rib, etc.) or marinated meat (beef bourguignon, coq au vin). It also pairs well with our regional soft cheeses (Brie, Munster, Langres, Chaource, Brillat-Savarin, etc.). Serve at cellar temperature: 14°C.

A local white grape variety also found in Luxembourg and Alsace, where it is often blended with Pinot Blanc. Made by direct pressing of whole grapes, composed of 100% Auxerrois. The colour is bright with green highlights, the nose is very fine and complex, combining citrus and floral notes (white flowers). The palate is supple and elegant, with pleasant citrus notes, vine peach and delicate exotic flavours on the finish.
Food pairings
Excellent as an aperitif, it pairs perfectly with seafood, as well as typical local starters (quiche Lorraine, frog pie, etc.) and white meats in sauce (blanquette, poule au pot). Serve chilled: 6-8°C.
